Can you guess what kind of cake this is???

This is a GREEN TOMATO cake....and yes it does have green tomatoes in the it, 2.5 cups to be exact!!

I found the recipe in the Paula Dean magazine and couldn't resist making this for my Dad's birthday cake!! Pretty tasty too!!

We spent the day celebrating my Dad's birthday...played some dominoes (Dad won by 5 points)!!

Enjoyed a good visit with everyone, including my cousin's sweet little daughter!! Have you seen a cuter little girl?????

Yummm! I've never heard of a green tomato cake. I do love fried green tomatos. Can you share the recipe?

GREEN TOMATO CAKE

1 cup (2 sticks) butter, softened
2.5 cups sugar
3 large eggs
3 cups all purpose flour
1 1/4 tsp. ground cinnamon
1 tsp. baking powder
1 tsp. salt
1/2 teaspoon ground nutmeg
2 1/2 cups DICED greentomatoes
1 cup golden raisins
1 cup chopped walnuts
Browned Butter Icing (recipe follows)

preheat oven 350 degrees, grease and flour a 12 cup Bundt pan. Beat butter and sugar with an electric mixer until creamy. Add aggs, one at a time, beating well after each addition.

In med. bowl, combine flour, cinnamon, baking powder, salt and nutmeg. Gradually add to butter mixture, beating well (batter will be stiff).

Stir in tomatoes, raisins and walnuts, sppon batter into prepared pan, back 1 hour and 10 to 15 minutes or till tester inserted in center comes out clean, cool on wire rack 10 minutes, remove from pan and cool completely. Spoon Browned Butter icing over cake.

Browned Butter Icing
1 stick butter
1 cup confectioners sugar

over low heat melt butter, cook 5-8 minutes or till lightly browned, whisk in sugar till smooth, check and whisk occasionally till THICK...then spoon on top of cake.

Addendum: This cake tastes sort of like Apple cake, not quite as sweet, not quite as spicy as a traditional spice cake. Different...good....worth making at least once if for no other reason than to watch everyone's face when you tell them it is a Green Tomato Cake! LOL!!

I'm telling you right now, that cake is goooood! We have eaten almost all of it.
This girl is a good cook. She sure doesn't take after me. I love to eat but not cook.

When I bake cakes I usually make a Campbell's tomato soup cake. It's the spice cake of my childhood.
